Sugar glass

Icing sugar is a type of sugar that is characterized by being pulverized or ground to powder size (with crystals with a diameter less than 0.15 mm) with the addition of 2 or 3% starch. This additive is of great importance to avoid sugar caking due to its high hygroscopicity.
